DIWALI SWEETS

Ingredients
1 1/2 cups All-purpose flour
1/4 cup butter
1/8 cup oil
3/4 tsp sugar
1 1/2 curd/yogurt
1/8 tsp baking soda
1/4 cup water
oil for deep frying
For Syrup
1/2 cup Sugar
2 green cardamom ,Powdered
2-3 strands saffron
1 tsp lemon juice
water to immerse sugar
Method
1. Melt butter, add oil, sugar,curd and baking soda and wisk until it forms into frothy.
2. Add Flour and mix into crumbles
3. Add 1/4 cup water slowly as of kneeding, without forming lumps.
4. After adding water, keep on kneading for almost 10 mins to form into a smooth dough
5. Heat oil in kadai, and divide the dough into 11-12 equal sized ball
6. Form into ball and press to little flatten around 1 1/2"-2" thickness,and roll as follows
7. Press the corner and bend inwards and immediately to the next make another bend and keep on doing this till starting corner.
8. This will be like rim formed in corners.
9. Now set aside and make for all
10. In a bowl with sugar and water, make syrup to the consistency that when u drop sugar syrup in water, it should not dissolve.
11. When about the consistency formed, add in powdered elaichi, saffron and lemon juice and stir and switch off flame.
12. When the oil skillet is hot enough, but not hot as it forms fumes,Drop in the shaped badhusha
13. Now remove the oil skillet from heat and let the badhushas get cooked in pre-heated oil for about 5 mins
14. When it starts to float, keep the skillet again in stove top and on medium heat, cook the badhushas till it is golden brown in color.
15. Remove from oil and immerse in sugar syrup
16. Drain and keep aside
17. when it is cooled down, store in airtight container
