Lauki/ bottle gourd/ sorakkai Kofta

Ingredients

Making Kofta:

2 cups grated lauki/bottle gourd/Sorakkai
8-9 tbsp besan flour
2 tbsp rice flour
pinch of baking soda
1 medium size onion finely chopped
1-2 green chillies
1/2 tsp red chilli powder
salt to taste
corriander leaves
oil for frying

Making gravy
1 big onion chopped
1 big tomato chopped
ginger 1"
3-4 garlic
cashew 8-9
1 tsp cumin seed
1/4 tsp turmeric powder
1 tsp red chilli powder
1 tsp garam masala
2 tbsp yogurt
2 tbsp oil
2 tbsp butter+1 tbsp oil
salt to taste

Method

Preparing Kofta

1. Grate Bottle gourd in grater with finer holes approximately 2 cups, squeeze out all the water from the grated bottle gourd
2. In a bowl, add grated gourd, besan flour, rice flour and all the ingredients under making kofta. add more besan if there is moisture.
3. Make small balls and fry in low heat. keep aside.

Preparing Gravy

1. Soak cashew for 15-20 mins in hot water.
2. heat 2 tbsp oil in skillet, add chopped onion and saute till its transparent, add ginger, garlic, tomatoes and saute for few more minutes.
3. Cool it, grind into paste adding water and cashew into a fine paste.
4. Heat oil and butter in kadai, add cumin seed, when splutter add the ground paste, turmeric powder, chilli powder, coriander powder, garam masala, curd and cook till it leaves oil.
5. Add 1 1/2 cup water and cook for few more minutes and bring to boil.
6. when it completely cooked add koftas to the gravy, and cook for 3-5 mins.
7. Garnish with corriander leaves.Serve hot with rice, pulao, chapathi, paratha.
