Pav Bhaji

Ingredients

1 big onion Finely(very)chopped
2 medim tomatoes chopped finely
2 green chilly, finely chopped
1 tbsp ginger garlic paste
1 cup mixed vegetables(carrot, beans, cauliflower)
1/2 cup peas
1/2 cup cabbage
1/4 tsp turmeric powder
3/4 tsp red chilli powder
1 1/2 tbsp pav bhaji masala powder
1/2 tsp sugar
1 tbsp lemon juice
3 tbsp butter
3 tbsp oil
corriander leaves
salt to taste
pav bread toasted in butter

Method

1. Cook all vegetables with 3/4 cup water with little salt
2. mash the cooked vegetables coarsely
3. in a large skillet, heat oil and butter, when hot add green chilles, ginger garlic paste and onion and fry well till onion is transparent.
4. Add turmeric, chilly powder pav bhaji masala, sugar and salt and mix well
5. Add tomatoes and mix wellok well
6. Add the mashed vegetables and mix well and add 1 cup water(adjust accordingly) and cover and let it simmer for approximately 10 mins and check and cover and cook for another 5 mins
or till oil-butter seperates out from the gravy and it starts to thicken
7. check for salt and turn off heat. can add 1/2 tsp butter if needed, add lemon juice and combine well.
8. Add chopped corriander leaves and mix well and serve with butter toasted pav bread/ hamburger bread
