Capsicum & Potato Rice

Ingredients

1 cup rice
1/2 of each red,yellow,green and orange capsicum
1 big potato
2 tsp red chilly powder
1 tsp garam masala powder
1 tsp black pepper powder
2 tsp jeeragam/cumin seed
1/2 tsp turmeric powder
salt to taste
2 strand curry leaves
2 strand spring onion
1 big onion
2 strand corriander leavves
1 tbsp raisin/kismis
1 tbsp broken cashew
1 1/2 tbsp oil

Method

1. Cook rice with 2 cups water in rice cooker
2. in a large skillet, add oil, when its hot add cumin seed,raisin and cashew
3. once it splutters, add onion and fry well. add curry leaves
4. add potato,capsicums(both cut into small bits), and fry well
5. add turmeric powder, chilly powder,garam masala, salt and fry well
6. Cover and cook, till potatoes are cooked well
7. if needed add very little water like 1 tbsp or so to cook the potatoes.
8. add chopped spring onion, corriander leaves and fry well
9. Serve with gravy or raitha.
