Vangi Bath/Brinjal rice

Ingredients

1 cup cooked basmathi rice
5-6 small brinjals
1 tsp tamarind paste/ small ball sized tamarind
1/4 tsp turmeric salt to taste
2 tbsp oil
1/4 tsp mustard
1 red chilly
pinch of asafetida
curry leaf
cashew few pieces broken

For Masala Powder

1tbsp coriander seed
1 tbsp channa dal
2 tsp urad dal
5 red chilly
1 tbsp shredded coconut
1 tsp oil

Method

1. soak tamarind in 1cup water and crush into a thick paste
2. id using paste mix the paste in 1 cup water, add turmeric and salt and keep aside
3. cut brinjal into small cut pieces and soak it in tamarind water for 15 mins
4. In a skillet, heat oil, and fry ingredients for masala powder.cool it and grind into fine powder
5. in the same oil, fry cashews and keep aside
6. in a skillet, heat oil and temper with mustard, chilly and asafoetida and curry leaf
7. pour the soaked brinjals along with tamarind water, cover and boil for 5 mins
8. then add the ground powder, and check for salt and cover for 5 more mins. once cooked by leaving oils around. switch off flame
9. mix in cooked rice as of needed and store remaining in tight container.
10. Garnish with cashew and serve.
