Ingredients
2 cup tri color Rotini pasta
1 cup chopped spinach
2 tsp basil blend
1/4 cup onion,chopped lengthwise
1 roma tomato,chopped
salt to taste
2 tsp freshly ground pepper
1 tbsp butter
2 garlic pods
parmesan cheese
cheddar and mozarella blend cheese
1. cook pasta in boiling water with little salt as directed in package. drain and reserve 1/4 cup water
2. In a large skillet, add butter
3. as it is melted, add crushed garlic pods, then add onion, fry till light brown
4. now add tomato and mix well
5. add spinach and cook with little salt till it is cooked
6. add basil blend, pepper and mix well and check for salt
7. add the cooked pasta along with 3-4 tbsp reserved pasta water
8. mix well and let the water dries out add cheddar and mozarella blend cheese as of ur choice
9. mix and immediately switch off as it gets stick to the skillet
10. now add parmesan cheese as of your choice on top of the pasta and serve hot
