Ingredients
2 Potatoes
1/2 of a big onion
3 roma tomato
1/2 cup tamarind juice
3 dry red chilly
pinch of turmeric powder
1 tbsp red chilly powder
2 tbsp coriander powder
1/2 tsp cumin seed
1/2 tsp pepper powder
2 strands curry leaves
3 garlic
1/2 tsp mustard seed
1/4 tsp fenugreek seed
1 tbsp butter
4 tbsp oil
3/4 cup water
Method
1. Chop onion and tomato very finely.
2. Chop potato into cubes
3. In a skillet, heat oil.splutter mustard, add fenugreek seed, curry leaves, garlic and red chillies. fry for few seconds
4. Now add onion and saute well,add cumin seeds and fry well.
5. Add tomato and saute till it mix up well with onion
6. Add salt, turmeric powder,chilly powder, coriander powder and pepper powder.
7. fry well till onion oozes out of the mixture
8. add the potato cubes and mix well with the masala
9. add 1/2 cup tamarind juice and 3/4 cup water. Check for taste and cover and cook for 10 mins
10. Add butter and stir well and cover again and cook in high for 5-10 mins or untill the curry is little thicker.
11. Now the potato curry is ready
12. can be served with rice/variety rice/ chapati/ poori
