Aaloo Spinach Curry

Ingredients

1 Potato
4 cup chopped Spinach
1/2 cup Moong Dal
1 onion
1/4 tsp mustard seed
1/4 tsp urad dal
few fennel seed
pinch of cumin seed
2 tsp sambhar chilly powder
salt to taste
2 tsp oil

Method

1. Boil potato. Pressure cook dal with 1 cup water
2. In a skillet, heat oil, add mustard seed, urad dal and cumin seed
3. Add onion, fry well
4. add chopped spinach, salt, chilly powder and cooked dal
5. Cover and cook till spinach is cooked
6. Add boiled potatoes and cook for 10 mins and switch off flame
7. Serve with rice/ dosa/ chappathi
