Coconut Chicken Curry

Ingredients

3 chicken breast(cut as u wish) with bones(without bones)
4 tbsp ginger garlic paste
2 cup onion, chopped finely
1 tomato, chopped finely
2 tsp pepper corns
2 tsp cumin seeds
1/4 cup shredded coconut
8-9 whole cashews
8-10 green chillies
1/2 cup coconut milk
salt to taste
4 tbsp oil
handful of mint leaf
handful of corriander leaf
2-3 strands curry leaf
Dry Whole Masalas
1" cinnamon stick
1 bay leaf
2 cloves
1 javentry
1 cardamom

NOTE:

* This recipe is rich in coconut flavour, so i have add spicy with green chillies.
* No need for corriander powder or chilly powder since, they might reduce the richness and green chilly flavour

Method

1. in a skillet with 1 tbsp oil, fry green chillies, pepper corn, cumin seeds, shredded coconut and cashews in the order as mentioned
2. grind this into a smooth paste
3. in the same skillet with remaining 3 tbsp oil, add the dry whole masalas
4. when it splutters, add onion, ginger garlic paste,curry leaf and, mint leaf fry well
5. then add chicken pieces, and fry well
6. Now add tomatoes and stir well
7. after 2-3 mins add the ground smooth chilly-cashew paste and 1 1/2 cup water and coconut milk
8. Add salt and check for salt and spicy.
9. let it boil and change to a pressure pan and leave for 2 whistles
10. after it cool downs, open and add corriander leaves and stir well
11. serve with rice/chapathi/pulao/biryani
