Beetroot kootu

Ingredients

1 cup beetroot
1/4 cup channa dal
1 tsp mustard seed
1/2 tsp urad dal
1 strand curry leaf
1/4 cup onion, chopped finely
2 tbsp coconut milk
salt to taste
1 1/2 tsp sambhar powder(combination of corriander& chilly powder)
2 tsp oil

Method

1. pressure cook channal dal with 3/4 cup water
2. in a skillet, add oil, when its hot, splutter mustard, urad dal, curry leaf,onion and fry well
3. add chopped beetroot, 1 cup water, cooked dal along with that water, salt, sambhar powder
4. mix well, add coconut milk and check for taste and cover and cook for 10-15 mins, or till beetroot is cooked well
5. can be served as a gravy for chapathi/ rice and can be a side dish for rice/pulao
