Garden Vegetable Soup

Ingredients

1 tbsp olive oil
1 tbsp finely minced garlic
1 1/2 cups any mixed vegetables(carrot, green beans, diced potato, corn, peas,leeks, broccoli)
2 1/2 cups chicken/vegetable broth
5-6 salad tomatoes,peeled seeded and chopped
1/4 tsp ground pepper
1/8 mixed herb and/or parsley
salt to taste

Method

1. Heat oil, add garlic, salt and stir(if adding leeks in ur cup of vegetable,add now and stir for 7-8 mins)
2. Add vegetables and cook for 4-5 mins more
3. Add stock, increase heat and bring to boil
4. Now simmer and add tomatoes, corn and pepper and cook for 25 mins.
5. Remove from heat, add mixed herb or parsley, season with salt and serve hot.
