Mutton Kurma

Ingredients

Mutton/Lamb-500 gms
Onion medium size 1 thinely sliced
tomato big 1
Yogurt less than 1/4 cup
bay leaf 1
cloves 2
cardamom 2
cinnamon stick 1"
cumin seed 1/2 tsp
fennel seed 1 tsp
shredded coconut 1/4 cup
cashew 5-6
peppercorns 1/2 tsp
green chilly 4-5 small
cumin seed 1 tbsp
red chilly powder 1 tbsp
coriander powder 1 1/2 tbsp
ginger garlic paste 3 tbsp
mint leaf,curry leaf and corriander leaf
turmeric powder 1/2 tsp
salt to taste
butter 1 tbsp
oil 1 tbsp

Method

1. Marinate mutton with yogurt, red chilly powder and turmeric powder for 1 hour
2. Heat oil in kadai, add peppercorns,green chilly,mint leaf,cashew,cumin seed,fennel seed and 3/4 the onion and fry well.
3. Add coconut and fry for another 3-4 mins, cool it and grind it to a paste
4. Add 3/4 of the tomatoes to the paste and grind that too.
5. In a pressure pan add the butter, melt it and add cinnamon,cardamom,cloves,curry leaf ,the remaining 1/4 the onion along with ginger garlic paste and fry well
then add tomatoes and give a well fry.
6. add the onion masala paste and coriander powder fry till oil oozes out
7. now add the marinated mutton and combine the masalas fully coated in the mutton and fry for 5 mins or so
8. now add 3-4 cups water,salt to taste and mix well and let it boiil. Then cover with lid and give 44-5 whistles(approximately 20-25 mins)
9. garnish with corriander leaf and serve with dosa, rice, paratha, chapathi...
