Browned Butter Blueberry Muffin

i was searching for a new recipes in baking and finally i ended up my search with blueberry muffin.
Because whenever we used to stay in Motel8 , we would be served with blueberry mufffin as breakfast...
that made me crazy over that.

i bought a muffin pan long back sitting comfortable in my racks
and now i purchased a 650 gm pack of bluberry in Costco, and had a big day


this muffin is joythebaker recipe..
this is simple and yummy
and is perfect for breakfast..

Here i used only 1 and quarter cups of blueberries, got lots more..
so will post some other bleberry recipes in couple of days..

tan-ta-dan, Introducing Browned butter blueberry muffin.

Serves : 12


Ingredients

1/3 cup 2%reduced milk(whole milk can be used)
1 large egg
1 large egg yolk
1 tsp vanilla extract
7 tbsp unsalted butter
1 1/2 cup all purpose flour
3/4 cup sugar
1/2 tsp salt
1 1/2 tsp baking powder
1 1/4 cups blueberries

Topping(Optional)

3 tbsp cold butter unsalted
1/2 cup all-purpose flou
2 tbsp sugar

Method

1. Keep reday everything. start with browning the butter
2. melt butter in small sausepan over medium heat. melt and cook butter until little brown and the crackling sound subsides. remove from heat and cool
3. Now mix the dry ingredients, whisk together flour, sugar, baking powder and salt in a bowl.
4. whisk together milk, egg,yolk and vanilla until combined
5. Pre-heat oven to 375 deg F. line muffin pan with paper cup
6. Add the browned butter and stir to combine
7. Add milk butter mixture all at once into the dry ingredients and stir gently to combine.
8. Gently and thoroughly fold in the blueberries
9. Divide the batter equally into the prepared cups
10. Toppings: coombine all the topping ingredients and mix with hand into crumbs. s
11. Sprinkle evenly on top of the batter in the cups
12. Bake for nearly 20-25 mins(time depends upon the oven) or toothpick inserted comes out clean
13. Remove when done and cool for 15 mins and serve.
