Dates Cake

Ingredients

1/2+1/3 cups stoned dates,chopped
1/2 tsp baking soda
1/3 cup unsalted butter
1/2+1/4 cup self rising flour
1/2+1/6 cup brown sugar
1 egg, lightly beaten
1 tbsp golden syrup(or substitute with 1 tbsp honey+1 tbsp corn syrup)
1/4+1/8 cup cream

Method

1. Preheat oven to 350 d F. Grease muffin pan
2. Place dates+1 cup water in sause pan, bring to boil and remove from heat
3. Stir in soda,1/2 cup butter and stir till completely dissolved
4. Sift flour with 2/3 cup sugar stir and make well in center, add date mixture and egg and stir well
5. Spoon the mixture evenly into the prepared pan and bake for 20 mins or the toothpick inserted comes out clean. and cool in the rack for 15 mins.

Syrup

Place golden syrup and cream with the remaining butter and sugar in a saucepan
stir on low heat for 3-5 mins or untill sugar has dissolved
Turn cake onto plate, pierce on top and drizzle with the syrup

Note

Measure the total amount of butter and sugar in the begining and then seperate for syrup and cake as of needed
